Homemade Marshmallows

I've had such a craving for Marshmallows lately. Did you know you can make them at home? I found this seemingly simple recipe. I'll have to add to my repertoire of recipes to make.

Ingredients
1 1/2 cups caster suger (confectionery sugar)
2 tablespoons gelatine
1 teaspoon vanilla extract
2 cups desiccated coconut
food colouring (optional)

I did know! My neighbors made them last christmas with home made hot chocolate mix - very cute! How did your recipe smell while making it? They said theirs smelled like "roasted wet dog" even though the end result tasted super yummy so I've been reluctant to try and make them because my pregnant stomach is weird with smells :(
